Ok, full disclosure.  I do not like cooked carrots.  Never have, never will.  However, this recipe is for those who do and would like an easy, different and delicious spin on this popular side dish from the TS blog post.  Try it out and let me know what you think! 



Oh My! Caramelized Carrots
  • Yield: 2-3 Servings

INGREDIENTSINSTRUCTIONS
  1. Place carrots and water in a covered glass dish; microwave 4-5 minutes until tender. Drain water; stir in remaining ingredients. Heat thoroughly.

TIPS & HINTS• This recipe is really easy to multiply. I made 4-5 servings by doubling the recipe. You end up with a little extra glaze, so add the final three ingredients 1 Tbsp. at a time until you have the right amount of sauce for your taste.

• I used whole carrots in place of baby carrots. I just peeled and cut them down to a manageable size for eating.

• You could serve these with a side of brown sugar for a nice sparkly topping that adds just a bit more sweetness.

 
The weekend is here and everyone is looking forward to relaxing and just taking it easy.  Keeping that in mind, I thought I would share this recipe video that would fit in easily on your stress free, easy going weekend.  Take a look and let me know what you think.   
 
Did you ever think you would hear the words "Gluten Free" and "Brownies" in the same sentence?  No?  Well now you have!  Tastefully Simple does gluten-free right with Gluten-Free Fudgy Brownie Mix.  Bonus: there are only TWO ingredients to add!  Just add butter and eggs.

Dark, dreamy and decadent. Enjoy with a cold glass of milk, or cube and layer with ice cream and fresh fruit for gluten-free banana splits. Kosher. Makes about 16 servings. 

Ingredients Needed:
  • ¾ cup (1½ sticks) butter
  • 2 eggs
Mix ingredients, pour into baking dish, and bake as directed.  Let cool and enjoy!  That simple, That easy.  

Here are some other suggestions on how you can also enjoy your brownies:
» Add ½ cup walnuts before baking.
» Stir ½ cup dried fruit into the batter.
» Make mini parfaits

 
If you are looking for something fun yet a little different as an after school snacks for the kids, then this is for you. Simple to make and the kids will love them and so will you!  
  • Yield: 12 Servings
INGREDIENTSINSTRUCTIONS
  1. Combine prepared Key Lime Cheese Ball Mix with whipped topping; chill. Prepare Citrus Sugar Cookie Mix as directed on the package; cool. Once cookies are completely cooled, spread Key Lime mixture on bottom side of cookies. Place another cookie on top to make a sandwich. Place in refrigerator or freezer. Makes about 12 cookie sandwiches.

Rustic Herb Roasted Chicken & Potatoes

Ingredients
8 chicken thighs
6 small red potatoes, quartered
1/4 cup olive oil
3-4 tsp. Rustic Herb Seasoning

Directions
Preheat the oven to 375°.Place chicken and potatoes on a large baking sheet; drizze with olive oil and sprinkle with Rustic Herb Seasoning.Bake 45-55 minutes or until chicken is completely cooked and potatoes are tender. Makes 3-4 servings.
